Cajun Chicken Quesadilla
1 oz. cajun seasonings
1 tsp. oil
4 slices of cheddar cheese
6 oz. chicken breast cut into strips
2 oz. Sal de Pueblo Lemon Pepper Seasonings
2 tsp. oil
Oil the tortilla on one side and sprinkle with the cajun seasonings.
Mix the chicken with the Sal de Pueblo Lemon Pepper.
Heat oil in a pan and cook the seasoned chicken.
Put 4 slices of cheddar cheese on the unseasoned part of the tortilla and place cooked chicken on half of tortilla.
Fold over the tortilla and heat in a skillet until both sides are crisp and cheese is melted. Be careful not to burn the cajun seasonings.
Cut into 3 triangles and serve with rice and beans or salad.
